Grandma Kay's 5 Minute Frozen Cranberry Dessert Recipe

I’m sharing a super special recipe with you all — my family has eaten this frozen cranberry dessert every Thanksgiving for my entire life as it was my Grandma Kay’s signature! It’s SO good and the perfect balance between sweet and tart. Now that she’s passed, I make it every year in her honor and my dad and I pretty much eat the whole pan.

I have modified this to be gluten free, lower sugar, and as organic as possible. This takes about 5 minutes to prepare, and you won’t regret it!

Grandma Kay’s Frozen Cranberry Dessert Recipe

INGREDIENTS:

1 can jellied cranberry sauce (the cleanest version I’ve found is by Full Circle)
2 cans or boxes of whole cranberry sauce (Pacific makes a cleaner one)
5-6 TB fresh lemon juice depending on how tart you want it (must be fresh)
1.5 pints Organic Valley whipping cream
1 tsp vanilla 
1/2 c Wholesome Foods organic powdered sugar
2 c chopped walnuts

{NOTE: if you try to make this without real whipping cream, my grandma will rise from her grave and slap it right out of your hands. This really needs actually whipped cream}

DIRECTIONS:

1. Mix together cranberry sauces and lemon juice. (You want the cranberry side to be tart. But depending how tart you like it, you may want to add more or less lemon juice)
2. Pour into a 9 x 13 pan. (If you want to do with the accurate way, you will freeze this until solid before doing the next step. If you don’t care if your layers are even, then just keep going)
3. Beat the whip cream until it firms up, gradually poor in the powdered sugar and vanilla.
4. Fold in chopped walnuts
5. Gently spoon on top of the cranberry mixture, if it’s not frozen. Spread it around without pushing too hard as the whip cream will sink into the cranberries.

Cover with foil and freeze until solid!
